Yes, this is an early phase of feta-draining the curds that were cooked earlier. They will drain for 18 hrs. The whey will go to a lucky neighborhood pig! It takes a total of 40.5 hours to complete all the phases of feta making! After draining, the curds will be cut into bite-sized pieces, salted and will drain another 8 hours then refrigerated for 12 more hours to further drain. They will then be submerged in the brine and bottled for you.
