Goat's Cheese & Herb Omelette
- 2 tsp Ruby Goat Dairy chevre with chives
- 2 Eggs
- 1 tsp Water
- 1 pinch Salt
- 1 pinch Pepper
- 1 tbsp Butter
In a small bowl, whisk the eggs, water, salt and pepper. Put a small, nonstick frying pan on medium heat. When the pan is hot, grease the pan with the butter. Add the egg mixture and cook until the egg is firm and moist in the middle. Crumble the cheese on one half of the omelette and fold the other half over it. Serve immediately.
- 1 Ripe Banana
- 1 Ripe Mango
- 7 cubes Ice
- 1 cup Ruby Goat Dairy goat's milk yogurt
Peel banana and cut in half. Peel mango and cut into chunks; a variety of mango that is not hairy will suit this recipe best. Put banana, mango, ice, and yogurt in a blender and whiz until smooth. Serve immediately while the drink is still cold.
Chef's note: Mango can be replaced with other available fresh fruit like papaya, naseberry, and guava.
